April Cooking Club

This month we had fun with all ladies .We made Turkish Pide Bread ,Rock Cookies ,Black Lentil Salad .We made them together all of them was delicious .Thank you for attending and helping .

 Turkish Pide Bread 
 For dough 
1 cup warm water 
1 cup warm milk 
2 tablespoon yeast 
1 teaspoon salt
3 1/2 flour 


For stuffing 
6 oz feta cheese 
6 oz mozzarella cheese
1 green pepper-1 red pepper
2 tomatoes 
6-7 green onions 

Put water, milk ,salt in a bowl add flour then put instant yeast and mix them, make smooth dough .Cover plastic wrap top of bowl and leave it in warm place .While you are waiting chop tomatoes,peppers and green onions in a small pieces put them in a bowl add feta cheese and mozzarella cheese and mix everything . Take your dough make 4 ball . Take one ball give canoe shape and place in a baking tray . Put 2 tablespoon or a little more stuffing mix ,fold end of the canoes for not to spill(see picture ). Make all dough ball like this . Then crack 2 eggs mix and with spoon put a little bit egg in each pide .It gives golden color and keep together stuffing mix . Bake in the oven in 400 F for 30 minutes or until gets golden color . Serve it when it is hot .
































Rock Cookies 

 2 stick butter 
1/2 cup oil 
3 eggs
1 cup sugar 
1 cup raisen 
1 cup chooped walnut 
1 teaspoon baking powder  
3 cup flour 
First crack eggs add room temperature butter , sugar , oil and mix then add walnut , raisin and flour top of the flour ad baking powder . Mix it well it must be sticky cookie dough . Take one tablespoon cookie dough leave it baking tray (see picture ) ,you can chose your size and shape if you want .Bake it in the oven 380 F for 30 minutes . Serve it when it is warm with coffee or tea .Delicious .












Black Lentil Salad 
 2 cup black lentil
1 cup jasmine rice 
2 carrot
1 bunch parsley 
1 bunch green onion 
1 lemon juice 
1/2 cup olive oil 




First cooked black lentil and rice in a separate bowl with water without oil and  salt .They must be cool down not hot .Chop green onion and parsley , grated carrot . Put lentil , rice and add chopped greens add 1/2 cup olive oil and 1 lemon juice salt if you want other spice then mix it well . It is ready to serve .

March Cooking Club

This month in our class we made Kataifi, Turkish Street Bread and Orzo Salad . We make it together and had fun .All of them was delicious try and see .

 .Here is our recipes .
 
  • Kataifi
1 package kataifi ( 16 oz )(shredded fillo dough)
2 sticks unsalted butter
2 cup oil
2 cup chopped walnut
 
For syrup 3 cup sugar
2 ½ cup water

First put your sugar and water in a pan boil for 15 minutes and it must be cool down. .While its boiling cut your kataifi roll in small piece. Melt the butter and add oil and boil them together for 2-4 minutes. Put 2 – 3 table spoon oil on bottom of your tray and place half of kataifi then spread oil with spoon use half of your oil then put walnut on top smoothly and press it very well and place your other half of kataifi and use your other half of oil spread it on top and press it again. Bake it in the oven for in 400 F for 40 minutes or bake it for got the golden color.After bake it wait for 15 – 20 minutes then pour the syrup on top of your desert, it will much better if your syrup is cold when pouring to your desert  .Wait 1 -2 hour then kataifi will absorb all syrup. Serve it when it is cold.

 
 
   


  • Turkish Street Bread ( Simit ) 
1 cup warm milk
1 cup warm water
½ cup oil
1 tablespoon sugar
1 teaspoon salt
2 tablespoon yeast
4 cup flour
 For coating
2 tablespoon grape molasses or maple syrup1 cup water
                                                      Put molasses and water in a small bowl and mix it .
 Place  milk, water, oil, salt, sugar in your bowl then add your flour and put the yeast on top then make the smooth dough. Cover on top of bowl with clear wrap  and put it warm place let it rise wait about 10 – 15 minutes . After then take small piece from the dough I got 24 small ball from my dough. Roll each ball like a long stick. Take two sick of dough put together at the beginning then roll them together like at the picture. After then first dip the dough in molasses- water then dip sesame seeds and place in a cooking tray. Let it rise again for 15 minutes and bake it in the oven at 450 F for 30 minutes it is baked when it gets the golden color. Serve it when it is hot with butter, cheese or honey .Enjoy.

 








 









 








 









  • Orzo salad 
For 6-8 service
1 Cup orzo
2 tomatoes
5-6 green onions
½ bunch parsley
1 lemon juice
½ cup olive oil
Salt

Put orzo in a pan boil it and cook it like any kind of pasta and let it cool down  .Cut the greens and tomatoes mix it with orzo add salt and oil and lemon juice mix again and serve it cold .
