March Cooking Club

This month in our class we made Kataifi, Turkish Street Bread and Orzo Salad . We make it together and had fun .All of them was delicious try and see .

 .Here is our recipes .
 
  • Kataifi
1 package kataifi ( 16 oz )(shredded fillo dough)
2 sticks unsalted butter
2 cup oil
2 cup chopped walnut
 
For syrup 3 cup sugar
2 ½ cup water

First put your sugar and water in a pan boil for 15 minutes and it must be cool down. .While its boiling cut your kataifi roll in small piece. Melt the butter and add oil and boil them together for 2-4 minutes. Put 2 – 3 table spoon oil on bottom of your tray and place half of kataifi then spread oil with spoon use half of your oil then put walnut on top smoothly and press it very well and place your other half of kataifi and use your other half of oil spread it on top and press it again. Bake it in the oven for in 400 F for 40 minutes or bake it for got the golden color.After bake it wait for 15 – 20 minutes then pour the syrup on top of your desert, it will much better if your syrup is cold when pouring to your desert  .Wait 1 -2 hour then kataifi will absorb all syrup. Serve it when it is cold.

 
 
   


  • Turkish Street Bread ( Simit ) 
1 cup warm milk
1 cup warm water
½ cup oil
1 tablespoon sugar
1 teaspoon salt
2 tablespoon yeast
4 cup flour
 For coating
2 tablespoon grape molasses or maple syrup1 cup water
                                                      Put molasses and water in a small bowl and mix it .
 Place  milk, water, oil, salt, sugar in your bowl then add your flour and put the yeast on top then make the smooth dough. Cover on top of bowl with clear wrap  and put it warm place let it rise wait about 10 – 15 minutes . After then take small piece from the dough I got 24 small ball from my dough. Roll each ball like a long stick. Take two sick of dough put together at the beginning then roll them together like at the picture. After then first dip the dough in molasses- water then dip sesame seeds and place in a cooking tray. Let it rise again for 15 minutes and bake it in the oven at 450 F for 30 minutes it is baked when it gets the golden color. Serve it when it is hot with butter, cheese or honey .Enjoy.

 








 









 








 









  • Orzo salad 
For 6-8 service
1 Cup orzo
2 tomatoes
5-6 green onions
½ bunch parsley
1 lemon juice
½ cup olive oil
Salt

Put orzo in a pan boil it and cook it like any kind of pasta and let it cool down  .Cut the greens and tomatoes mix it with orzo add salt and oil and lemon juice mix again and serve it cold .

Poppy seeds Cake

3 eggs
1 cup sugar
½ cup oil
½ cup milk
1 cup poppy seed
1 cup flour
1 teaspoon baking powder
For syrup
1 ½ cup hot water
1 ½ cup sugar

First crack the eggs and add sugar mix it and then add oil, milk, poppy seed mix them and add flour and baking powder. Place it on the baking pan, bake it 350F for 30 min.
Take the cake from the oven and after cooled down for 10 min. 1 ½ cup sugar – 1 ½ cup hot water mix it well then pour on top of cake it will soak the syrup in a minute . Before serving your cake spread cool whip on top.


Turkish Pizza

For 24 piece
1 pound ground beef
6 onions
2 green peppers
1 yellow pepper
1 red pepper
4 tomatoes
1 small package tomato paste (6 oz)
2 package tortilla (24 pieces)
Salt, hot peppers and black peppers

For Turkish pizza we need to chop our onions, peppers and tomatoes and place them in a big bowl add ground beef, tomato paste and salt mix them very well . Place your tortilla on counter top and put 2 tablespoon ground beef mixture and spread it smoothly. After then place them in your oven then broiled them one bye one for about 7 – 10 minute. Serve it when it is hot with lemon and parsley and tomatoes.


Kisir

2 ½ cup fine cracked wheat
2 ½ cup hot water
1 small package tomatoes paste
1 cup oil
1 lemon juice
1 bunch of green onions ( aprx 10 )
½ bunch parsley
Salt and black pepper, red pepper

Place wheat in a bowl and add hot water on top wait  10 min for to rise. While you are waiting chop your greens. First put tomatoes paste lemon juice salt and spices and oil on your wheat mix them very well and then add greens mix it and it is ready to be serve .You can add cucumber , lettuce , tomatoes , green peppers if you want.
