February Cooking Club


Poppy seeds Cake

3 eggs
1 cup sugar
½ cup oil
½ cup milk
1 cup poppy seed
1 cup flour
1 teaspoon baking powder
For syrup
1 ½ cup hot water
1 ½ cup sugar

First crack the eggs and add sugar mix it and then add oil, milk, poppy seed mix them and add flour and baking powder. Place it on the baking pan, bake it 350F for 30 min.
Take the cake from the oven and after cooled down for 10 min. 1 ½ cup sugar – 1 ½ cup hot water mix it well then pour on top of cake it will soak the syrup in a minute . Before serving your cake spread cool whip on top.


Turkish Pizza

For 24 piece
1 pound ground beef
6 onions
2 green peppers
1 yellow pepper
1 red pepper
4 tomatoes
1 small package tomato paste (6 oz)
2 package tortilla (24 pieces)
Salt, hot peppers and black peppers

For Turkish pizza we need to chop our onions, peppers and tomatoes and place them in a big bowl add ground beef, tomato paste and salt mix them very well . Place your tortilla on counter top and put 2 tablespoon ground beef mixture and spread it smoothly. After then place them in your oven then broiled them one bye one for about 7 – 10 minute. Serve it when it is hot with lemon and parsley and tomatoes.


Kisir

2 ½ cup fine cracked wheat
2 ½ cup hot water
1 small package tomatoes paste
1 cup oil
1 lemon juice
1 bunch of green onions ( aprx 10 )
½ bunch parsley
Salt and black pepper, red pepper

Place wheat in a bowl and add hot water on top wait  10 min for to rise. While you are waiting chop your greens. First put tomatoes paste lemon juice salt and spices and oil on your wheat mix them very well and then add greens mix it and it is ready to be serve .You can add cucumber , lettuce , tomatoes , green peppers if you want.

January Cooking Club

Our first Cooking Club of the year was fun and yummy  .We made Stuffed Grape Leaves( Sarma), Spinach Pastry (Ispanakli Borek ), Cinnamon Cookies( Tarcinli Kurabiye ) .They were very tasty tyr them at home .
Thank you for everyone who is attending our club .Next month we will make Turkish Pizza , Poppy Seeds Cake and Kisir don't miss all of them .I will send new flyer soon .See you next month .

Stuffed Grape Leaves  
1 Jar grape leaves 
6 onions 
2  1/2 cup rice (I used jasmine )
1 cup olive oil
1/2 bunch parsley
2 tbspoon sugar 
1 tbspoon salt 
2 tbspoon mint 
1 teaspoon black pepper 

First we need to prepared stuffing mix . We chopped onions then saute them with olive oil for 2-3 min. then we add washed rice saute for 2 min then add all spice, parsley  and add 2 cup water in medium  heat cook the rice until water is gone .Let it cool down  for 10 min. While you are waiting wash grape leaves with hot water , after then stuffed your leaves like you see in the picture( lay down your leaf put 1 full tablespoon stuffing mix then fold two top of parts leafs then fold each side and roll it with tightly , it must be tight for not to open ) .Place them in a cooking pot add 3 cup water , put lemon slices on top and put small plate or other small lid on top of the leaves ( it will help to leaves not going up when it is boiled ) . After boiling in low heat simmer it when all water is gone your Sarma is ready . Serve it when it is cool .





































Spinach Pastry (Ispanakli Borek )
 For filling
20 oz Spinach
2 Package tortilla (24 piece)
4 Onions 
1/2 cup oil 
Salt and black pepper 
For sauce
1 cup oil 
1 cup yogurt,2 eggs 

First chopped spinach and onions place them a big bowl and add oil and spice mix it very well.I used 20 oz spinach for 24 piece tortilla if it is to much chose your amount (you can use 10 oz for 12 tortilla ) . For sauce our pastry cracked eggs ,add yogurt and oil mix it . As you see in the picture take one tortilla and add 2 tablespoon sauce spread the sauce then put spinach one side of tortilla then roll it . Place all rolled tortilla to baking tray , for top spread 1 egg yolk on each pastry  ,put black sesame seed or sesame seed or nothing on top then bake it 400 F preheated oven until  they got golden color . Serve when it is warm .



































Cinnamon Cookies (Tarcinli Kurabiye )
2 sticks butter 
1 cup powder sugar 
1 cup corn starch
1 egg
1/2 cup oil 
3 cup flour 
1 teaspoon baking powder 
for coating 
2 tablespoon sugar ,1 tablespoon cinnamon 

Put all ingredients except flour and baking powder and mix them well add flour and baking powder make smooth cookie dough. Take one big piece from dough and roll it like see you in the picture and cut small pieces place them baking pan and bake them 380 F preheat oven for 30 min . Take them from oven and when they are hot coat them one bye one with cinnamon and sugar mixture and  place them service plate  .It is ready to eat .

November Cooking Club

We had very good time and delicious food this month . We made Salty Cake ( Tuzlu Kek) , Rose Desert (Gul tatlisi ) and Potato Salad ( Patates Salatasi ) .I hope you will try and like this recipes .

Salty Cake  (Tuzlu Kek )

 3 Eggs 
 1 cup yogurt
 1 cup oil 
 1 stick butter (melted )
 2 cup flour
1 teaspoon baking powder 
 1 teaspoon salt 
 parsley and feta cheese 

Cracked eggs , put yogurt , oil and butter mix and add cheese , parsley and baking powder, salt . Mix them and add flour then mix . Place the dough on buttered  pyrex bake it 375F - 400 F untill  it is golden color . Rose Desert ( Gul Tatlisi )


 2 eggs 
 2 stick butter ( room temperature) 
 1/2 cup sugar
 1 teaspoon baking powder 
 2 cup flour
 walnut 
 For syrup 
 2,5 cup sugar 
 3 cup water boiled them together for 15 minutes let it cool down .

Put all ingredients in a bowl make smooth and soft dough. Put the dough at a surface then  roll the dough flat like a cookie dough . Cut from dough 2.5 inc diameter circle . Put 3 circle as you seen at the picture then put walnut each side , roll the dough and cut from in the middle . Bake them 400 F until they are golden color . When it is baked after 10 min. pour the syrup for each rose and serve when it is cool .



           



















Potato Salad ( Patates salatasi )
  8 potato
 1 lemon
 1small lettuce
 5- 7 green onion 
 parsley 
salt , black pepper and other spices you like.

Wash the potato and peel ( I hate peeling potato after boiling that's why I peel them first then I boiled) . We used red skin potato you can use any kind of potato. After boil the potato let them cool while you were waiting chop all your greens (onion, lettuce,parsley  ). Then chop your potato small cube size or any size you want add greens and lemon juice and spices then mix it very well and it is ready to serve .
